Our Philosophy in the Kitchen

For over 40 years, our kitchen has followed a simple rule: respect the product.

Fresh fish does not need elaborate sauces or masking. All you need is lemon, extra virgin olive oil, and careful cooking to bring out its natural flavor.

Every day, we personally select our fish in Milan and from local fishermen in Engadine. Only products that arrive alive in our kitchen are cooked: freshness is our hallmark.

Alongside the sea, we celebrate the Alpine region: pizzocheri from Valtellina, chestnut ravioli from Bregaglia, local cheeses, and seasonal game. This balance between sea and mountains is what makes us unique.
